Cheddar Cheese Soup

Ingredients

- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 (12 ounce) cans carnation evaporated milk
- 1 cup beer or 1 cup water
- 2 teaspoons worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard (optional)
- 1/4 teaspoon cayenne pepper
- 2 cups sharp cheddar cheese, shredded (8 ounces)
- cooked crumbled bacon
- sliced green onion
- herbed croutons
Recipe
- 1 heat butter in large saucepan over medium heat.
- 2 add flour; cook, stirring constantly or until bubbly.
- 3 add evaporated milk; bring to a boil over high heat, stirring constantly.
- 4 reduce heat; stir in beer, worcestershire sauce, salt, mustard and cayenne pepper.
- 5 simmer 10 minutes and remove from heat.
- 6 stir in cheddar cheese until melted.
- 7 ladle into bowls.
- 8 serve with toppings.
