Cheddar Cheese Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 (12 ounce) cans carnation evaporated milk
  • 1 cup beer or 1 cup water
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard (optional)
  • 1/4 teaspoon cayenne pepper
  • 2 cups sharp cheddar cheese, shredded (8 ounces)
  • cooked crumbled bacon
  • sliced green onion
  • herbed croutons

Recipe

  • 1 heat butter in large saucepan over medium heat.
  • 2 add flour; cook, stirring constantly or until bubbly.
  • 3 add evaporated milk; bring to a boil over high heat, stirring constantly.
  • 4 reduce heat; stir in beer, worcestershire sauce, salt, mustard and cayenne pepper.
  • 5 simmer 10 minutes and remove from heat.
  • 6 stir in cheddar cheese until melted.
  • 7 ladle into bowls.
  • 8 serve with toppings.
