Chicken Lime Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 cup chopped onion
  • 3 garlic cloves, minced
  • 2 teaspoons dried oregano leaves
  • 1 bay leaf
  • 1 1/2 cups shredded cooked chicken
  • 1 1/2 quarts chicken broth
  • 1/2 cup fresh lime juice
  • salt and black pepper
  • 1 cup shredded monterey jack and cheddar cheese blend
  • 1/2 cup chopped cilantro

Recipe

  • 1 mix tomatoes, onion, chili peppers, garlic, oregano and bay leaf in 4-quart saucepot. cook on medium-high heat 10 minutes, stirring occasionally.
  • 2 add chicken, chicken broth and lime juice. bring to boil. reduce heat to medium-low; simmer 30 minutes. remove and discard bay leaf. season soup with salt and black pepper to taste.
  • 3 serve in soup bowls topped with cheese and cilantro. may also top with sour cream & tortillas if desired!
