Beer & Cheese Muffins

Ingredients
- Servings: 6
- 1 cup flour
- 3/4 low-fat cheddar cheese
- 4 teaspoons sugar
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup beer
- 1 egg (beaten)
Recipe
- 1 measure out 2/3 cup beer-drink rest.
- 2 preheat oven to 375°f.
- 3 spray 6 muffin cups with nonstick cooking spray.
- 4 spoon flour into measuring cup& level off.
- 5 combine flour, cheese, sugar, baking powder, baking soda, and salt and mix well.
- 6 add beer and egg, and stir into dry mixture until just moistened.
- 7 divide evenly into muffin cups (about 3/4 full).
- 8 bake 17-22 minutes, or until golden brown and toothpick inserted into center comes out clean.
- 9 best served warm-- great with chili or tortilla soup.
