Beer & Cheese Muffins

Total Time: 25 mins Preparation Time: 8 mins Cook Time: 17 mins

Ingredients

  • Servings: 6
  • 1 cup flour
  • 3/4 low-fat cheddar cheese
  • 4 teaspoons sugar
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup beer
  • 1 egg (beaten)

Recipe

  • 1 measure out 2/3 cup beer-drink rest.
  • 2 preheat oven to 375°f.
  • 3 spray 6 muffin cups with nonstick cooking spray.
  • 4 spoon flour into measuring cup& level off.
  • 5 combine flour, cheese, sugar, baking powder, baking soda, and salt and mix well.
  • 6 add beer and egg, and stir into dry mixture until just moistened.
  • 7 divide evenly into muffin cups (about 3/4 full).
  • 8 bake 17-22 minutes, or until golden brown and toothpick inserted into center comes out clean.
  • 9 best served warm-- great with chili or tortilla soup.
