Buttermilk Cornbread

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 2 cups yellow cornmeal
  • 1 cup all-purpose flour, sifted
  • 1/4 cup sugar
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt (necessary)
  • 1/2 teaspoon baking soda
  • 3/4 cup unsalted butter (chilled into small pieces)
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla extract
  • 3 large eggs

Recipe

  • 1 preheat oven to 400f degrees.
  • 2 butter bottom and sides of 10" cast iron skillet or a 9x9" baking dish.
  • 3 mix first 6 ingredients in a food processor.
  • 4 cut in butter until mixture resembles coarse meal.
  • 5 beat buttermilk, vanilla and eggs in a large bowl.
  • 6 add milk mixture to dry ingredients and process until well blended.
  • 7 transfer to prepared skillet or dish.
  • 8 bake about 30 minutes until golden on top and tester comes out clean when inserted into center.
  • 9 cool in skillet or dish on wire rack.
  • 10 serve with a nice bowl of soup and a green salad.
