Acapulco Chicken

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 2 -3 lbs boneless skinless chicken breasts (about 6 breasts)
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 (10 3/4 ounce) cans cream of chicken soup
  • 16 ounces sour cream
  • 1 (4 ounce) can green chilies, diced
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon pepper
  • 2 cups swiss cheese, shredded

Recipe

  • 1 place chicken in a greased 9x13" casserole dish.
  • 2 melt butter in skillet. add flour & cook until golden brown.
  • 3 stir in soup, sour cream, chilies, onion salt & pepper. simmer for 10 minutes, stirring frequently.
  • 4 pour sauce over chicken in casserole. bake at 400 degrees for 15 minutes.
  • 5 cover with foil, reduce heat to 350 degrees and bake for 1 hour.
  • 6 uncover & sprinkle cheese over top. bake uncovered for 15 minutes more or until cheese is melted.
