Bok Choy & Red Pepper Laska

Total Time: 8 mins Preparation Time: 3 mins Cook Time: 5 mins

Ingredients

  • Servings: 3
  • 1 -2 ounce dry noodles
  • 1 -2 ounce thai curry paste (red or green)
  • 1 1/2 cups coconut cream, coconut milk will do but it won't be as rich
  • 1 baby bok choy, roughly chopped
  • 1 red bell pepper, roughly chopped
  • handful fresh basil leaf

Recipe

  • 1 cook noodle according to type (some are boiled, others just soaked, drain.
  • 2 in a pan place oil and add curry paste and stir fry for 30 seconds.
  • 3 quickly add coconut cream and 2 cups of water.
  • 4 bring to a boil and add vegetables. simmer for 2 minutes or until vegetables are cooked to your liking.
  • 5 to serve, divide noodles between 3 bowls. pour over soup and vegetables and top with basil leaves.
  • 6 feel free to use other veiggies.
