Carrot Soup

Ingredients
- Servings: 4
- 1 tablespoon butter
- 1 large onion, chopped
- 4 -5 medium carrots, sliced thin
- 3 1/2 cups low sodium chicken broth
- 1/4 cup uncooked rice
Recipe
- 1 saute onions & carrots in butter,untill onions are translusent.
- 2 add broth.
- 3 bring to a boil.
- 4 add rice & stir.
- 5 reduce heat to a low simmer& cover.
- 6 cook 30 minutes or until carrots are soft.
- 7 cool slightly.
- 8 puree entire mixture.
- 9 return to pot & simmer till warm.
- 10 serve with fresh ground black pepper & oyster crackers.
- 11 if desired add a little milk,sour cream or plain yogurt.
