Carrot Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 4 -5 medium carrots, sliced thin
  • 3 1/2 cups low sodium chicken broth
  • 1/4 cup uncooked rice

Recipe

  • 1 saute onions & carrots in butter,untill onions are translusent.
  • 2 add broth.
  • 3 bring to a boil.
  • 4 add rice & stir.
  • 5 reduce heat to a low simmer& cover.
  • 6 cook 30 minutes or until carrots are soft.
  • 7 cool slightly.
  • 8 puree entire mixture.
  • 9 return to pot & simmer till warm.
  • 10 serve with fresh ground black pepper & oyster crackers.
  • 11 if desired add a little milk,sour cream or plain yogurt.
