Carrot Soup

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 8 large carrots, sliced
  • 1 onion, sliced
  • 3 cups water
  • 1 cup orange juice
  • 1 teaspoon curry powder
  • 1 chicken bouillon cube
  • 3 tablespoons butter
  • 4 teaspoons cream (to garnish)
  • pepper

Recipe

  • 1 saute onion until transparent.
  • 2 add carrots and sweat for a few minutes.
  • 3 add water, curry, bouillon, and simmer until soft.
  • 4 place in blender on medium and whip until smooth.
  • 5 when serving add cream in a swirl as garnish.
  • 6 chopped parsley and chives may also be used for garnish.
  • 7 serve with french loaf and light butter.
