Carrot Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 3 cups vegetable stock
  • 1 (1 lb) bag carrot
  • 3 tablespoons sour cream
  • salt

Recipe

  • 1 put the stock in a large pot and bring the to a boil.
  • 2 peel, wash and chop the carrots.
  • 3 boil the carrots for about 20 minutes until soft.
  • 4 remove pot from heat and use a hand blender to mix thoroughly.
  • 5 add the sour cream. blend again.
  • 6 add salt to taste.
