Cheesy Broccoli

Total Time: 1 hr 3 mins Preparation Time: 28 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 2 bunches broccoli, cut into spears
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1/2 teaspoon fresh ground pepper
  • 2 cups milk
  • 200 g cream cheese, softened
  • 2 cups cheddar cheese, grated
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup walnuts, chopped

Recipe

  • 1 steam the broccoli spears until they are crisp-tender.
  • 2 melt butter in a saucepan.
  • 3 add the flour and pepper and stir constantly for half a minute, until the mixture is smooth and bubbly.
  • 4 add the milk and cream cheese.
  • 5 stir constantly until the sauce thickens and reaches the boiling point.
  • 6 add cheddar cheese and blue cheese.
  • 7 keep stirring until the cheeses are melted.
  • 8 this takes anywhere between 1-2 minutes.
  • 9 stir in the chopped walnuts once and remove from heat.
  • 10 pour this mixture over the steamed broccoli.
  • 11 serve warm.
  • 12 enjoy!
  • 13 tip: do not discard the tough ends of broccoli stalks.
  • 14 use them for making soups.
