Cheesy Broccoli

Ingredients

- 2 bunches broccoli, cut into spears
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1/2 teaspoon fresh ground pepper
- 2 cups milk
- 200 g cream cheese, softened
- 2 cups cheddar cheese, grated
- 1/2 cup blue cheese, crumbled
- 1/2 cup walnuts, chopped
Recipe
- 1 steam the broccoli spears until they are crisp-tender.
- 2 melt butter in a saucepan.
- 3 add the flour and pepper and stir constantly for half a minute, until the mixture is smooth and bubbly.
- 4 add the milk and cream cheese.
- 5 stir constantly until the sauce thickens and reaches the boiling point.
- 6 add cheddar cheese and blue cheese.
- 7 keep stirring until the cheeses are melted.
- 8 this takes anywhere between 1-2 minutes.
- 9 stir in the chopped walnuts once and remove from heat.
- 10 pour this mixture over the steamed broccoli.
- 11 serve warm.
- 12 enjoy!
- 13 tip: do not discard the tough ends of broccoli stalks.
