Cream Of Lettuce Soup

Ingredients
- 1 tablespoon butter
- 1/4 lb bacon, cooked (not too brown)
- 3/4 cup finely chopped onion
- 1 lb leaves lettuce, such as butter lettuce, finely chopped
- 2 tablespoons flour
- 2 cups milk
- 1 cup whipping cream
- 1/2 teaspoon salt
- ground black pepper
- 1 dash ground nutmeg
- crouton
- grated parmesan cheese
Recipe
- 1 melt butter over medium heat in pot, add bacon,onion and cook until onion is tender, about 5 minutes. bacon should be crisp at this point.
- 2 add lettuce and cook until lettuce is completely tender, about 6 minutes. sprinkle with flour and cook 1 more minute, stirring once or twice.
- 3 add milk and cream and season with salt and pepper. add nutmeg. increase heat, bring soup to a boil, reduce heat and simmer 5 minutes. garnish with croutons and grated parmesan cheese.
