Cream Of Lettuce Soup

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 tablespoon butter
  • 1/4 lb bacon, cooked (not too brown)
  • 3/4 cup finely chopped onion
  • 1 lb leaves lettuce, such as butter lettuce, finely chopped
  • 2 tablespoons flour
  • 2 cups milk
  • 1 cup whipping cream
  • 1/2 teaspoon salt
  • ground black pepper
  • 1 dash ground nutmeg
  • crouton
  • grated parmesan cheese

Recipe

  • 1 melt butter over medium heat in pot, add bacon,onion and cook until onion is tender, about 5 minutes. bacon should be crisp at this point.
  • 2 add lettuce and cook until lettuce is completely tender, about 6 minutes. sprinkle with flour and cook 1 more minute, stirring once or twice.
  • 3 add milk and cream and season with salt and pepper. add nutmeg. increase heat, bring soup to a boil, reduce heat and simmer 5 minutes. garnish with croutons and grated parmesan cheese.
