Cream Of Mushroom Soup

Ingredients

- 1/4 cup chopped onion
- 2 tablespoons butter or 2 tablespoons margarine
- 3 cups sliced fresh mushrooms
- 6 tablespoons all-purpose flour
- 2 (14 1/2 ounce) cans chicken broth
- 1 cup half-and-half
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 in a large saucepan, saute onion in butter until tender.
- 2 add mushrooms and saute until tender.
- 3 combine flour and broth until smooth,stir into the mushroom mixture.
- 4 bring to a boil; cook and stir for 2 min.
- 5 or until thickened.
- 6 reduce heat.
- 7 stir in the cream,salt and pepper.
- 8 simmer, uncovered, for 15 minutes, stirring often.
