Chicken Avocado Soup

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1 (8 ounce) box spanish rice
  • 3 avocados
  • 1 onion
  • 1 (8 ounce) can diced tomatoes
  • 1 bunch cilantro
  • 1 pre-cooked broiled chicken
  • 1 (64 ounce) can chicken broth

Recipe

  • 1 remove the skin from the chicken. cut or tear the chicken into large strips.
  • 2 cook the spanish rice according to its instructions.
  • 3 dice the onion and cilantro.
  • 4 cut the avocados into medium sized cubes.
  • 5 add the chicken strips, tomatoes, onion and cilantro into a large pot with the chicken broth. bring to a boil.
  • 6 to serve, put some of the spanish rice into a soup bowl and add some soup. top off with the avocados.
