Chicken Avocado Soup

Ingredients
- 1 (8 ounce) box spanish rice
- 3 avocados
- 1 onion
- 1 (8 ounce) can diced tomatoes
- 1 bunch cilantro
- 1 pre-cooked broiled chicken
- 1 (64 ounce) can chicken broth
Recipe
- 1 remove the skin from the chicken. cut or tear the chicken into large strips.
- 2 cook the spanish rice according to its instructions.
- 3 dice the onion and cilantro.
- 4 cut the avocados into medium sized cubes.
- 5 add the chicken strips, tomatoes, onion and cilantro into a large pot with the chicken broth. bring to a boil.
- 6 to serve, put some of the spanish rice into a soup bowl and add some soup. top off with the avocados.
