Betty Ford's Chinese Pepper Steak

Total Time: 52 mins Preparation Time: 12 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs flank steaks
  • 4 teaspoons oil
  • 3 green peppers, cut in 1 1/2 inch pieces
  • 2 cups water
  • 1 envelope onion soup mix
  • 2 teaspoons soy sauce
  • 1/2 cup sherry wine
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons cornstarch (mixed in 4 t water)

Recipe

  • 1 cut steak lengthwise in 1/2 inch strips.
  • 2 heat oil in lg skillet.
  • 3 fry steak a handful at a time only long enough to change color.
  • 4 remove steak from skillet.
  • 5 saute the green peppers.
  • 6 bring 2 cups water to a boil in dutch oven.
  • 7 add onion soup mix and boil for 5 minutes.
  • 8 add steak and peppers.
  • 9 simmer for 1/2 hour.
  • 10 add soy sauce, salt, pepper and wine.
  • 11 add cornstarch mixture and cook until just thickened.
