Broccoli-swiss Soup

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 (14 ounce) cans chicken broth
  • 1 (16 ounce) package fresh broccoli florets
  • 1/2 cup chopped onion (1 medium)
  • 2 teaspoons bottled roasted garlic
  • 1 cup shredded swiss cheese (4 oz.)
  • 1 cup half-and-half or 1 cup light cream
  • 1/2 cup cubed cooked ham

Recipe

  • 1 in a large saucepan, combine broth, broccoli, onion, and roasted garlic.
  • 2 bring to a boil; reduce heat, cover, and simmer about 10 minutes or until broccoli is very tender.
  • 3 place half of the broccoli mixture in a blender or food processor.
  • 4 cover and blend or process until smooth.
  • 5 transfer to a bowl; repeat with remaining broccoli mixture.
  • 6 return all of the mixture to the saucepan.
  • 7 bring broccoli mixture to simmering.
  • 8 add cheese; cook and stir until cheese melts.
  • 9 stir in half-and-half and ham; season to taste with salt and ground black pepper.
