Broccoli-swiss Soup

Ingredients
- Servings: 4
- 2 (14 ounce) cans chicken broth
- 1 (16 ounce) package fresh broccoli florets
- 1/2 cup chopped onion (1 medium)
- 2 teaspoons bottled roasted garlic
- 1 cup shredded swiss cheese (4 oz.)
- 1 cup half-and-half or 1 cup light cream
- 1/2 cup cubed cooked ham
Recipe
- 1 in a large saucepan, combine broth, broccoli, onion, and roasted garlic.
- 2 bring to a boil; reduce heat, cover, and simmer about 10 minutes or until broccoli is very tender.
- 3 place half of the broccoli mixture in a blender or food processor.
- 4 cover and blend or process until smooth.
- 5 transfer to a bowl; repeat with remaining broccoli mixture.
- 6 return all of the mixture to the saucepan.
- 7 bring broccoli mixture to simmering.
- 8 add cheese; cook and stir until cheese melts.
- 9 stir in half-and-half and ham; season to taste with salt and ground black pepper.
