Cauliflower And Onion Soup

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 onion, diced
  • 3 tablespoons butter
  • 2 cups chicken broth
  • 1 (10 ounce) package frozen cauliflower
  • 1 (10 3/4 ounce) can condensed cream of potato soup
  • 1 cup whipping cream
  • 1 large egg
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large saucepan melt butter.
  • 2 saute onion in butter.
  • 3 add chicken broth and cauliflower.
  • 4 cover and cook over low heat until tender.
  • 5 cool and puree with an immersion blender or with a food processor until smooth.
  • 6 return to the saucepan.
  • 7 in a bowl, mix together cream of potato soup, whipping cream, egg and pepper.
  • 8 stir into the cauliflower mixture and heat until warm.
  • 9 serve immediately.
