Cheesy Broccoli Soup

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1/2 lb butter (2 sticks)
  • 1 cup all-purpose flour
  • 1 quart chicken stock
  • 1 quart half-and-half
  • 1 -1 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon ground cayenne pepper
  • 1 lb broccoli floret
  • 6 ounces sharp cheddar cheese
  • 2 tablespoons chives or 2 tablespoons scallions, chopped

Recipe

  • 1 melt butter in a large saucepan over medium heat.
  • 2 add flour and cook, stirring constantly to make a very "blond" roux, about 3-4 minute.
  • 3 add chicken stock, half and half, salt, mustard, and cayenne.
  • 4 bring to a simmer, stirring frequently.
  • 5 add broccoli and reduce heat to a simmer.
  • 6 cook about 15-20 min, or until the broccoli is crisp-tender.
  • 7 add cheddar cheese and stir to combine. simmer until cheese melts.
  • 8 serve with a topping of chives or scallions and a little more cheese if desired.
