Cheesy Broccoli Soup

Ingredients

- 1/2 lb butter (2 sticks)
- 1 cup all-purpose flour
- 1 quart chicken stock
- 1 quart half-and-half
- 1 -1 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon ground cayenne pepper
- 1 lb broccoli floret
- 6 ounces sharp cheddar cheese
- 2 tablespoons chives or 2 tablespoons scallions, chopped
Recipe
- 1 melt butter in a large saucepan over medium heat.
- 2 add flour and cook, stirring constantly to make a very "blond" roux, about 3-4 minute.
- 3 add chicken stock, half and half, salt, mustard, and cayenne.
- 4 bring to a simmer, stirring frequently.
- 5 add broccoli and reduce heat to a simmer.
- 6 cook about 15-20 min, or until the broccoli is crisp-tender.
- 7 add cheddar cheese and stir to combine. simmer until cheese melts.
- 8 serve with a topping of chives or scallions and a little more cheese if desired.
