Chicken Casserole

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 3 cups chicken, cooked and cubed
  • 1 1/2 cups celery, chopped
  • 1 1/2 cups nuts, chopped (toasted, slivered almonds)
  • 3 cups cooked rice (long grain best)
  • 1 1/2 cups mayonnaise
  • 3 tablespoons onions, chopped
  • 1 (10 ounce) can cream of chicken soup
  • 1 (10 ounce) can cream of mushroom soup
  • 1 (10 ounce) can cream of celery soup
  • 1 teaspoon salt (can be omitted)
  • 3/4 teaspoon pepper
  • 3 tablespoons lemon juice
  • 3 chicken, bouillion cubes
  • 3/4 cup water
  • potato chips, crushed

Recipe

  • 1 dissolve bouillion cubes in water.
  • 2 combine all ingredients, mixing thoroughly. (save a few almonds & chips for the top).
  • 3 place in a 9 x 14 casserole.
  • 4 cover with crushed potato chips and almonds.
  • 5 bake at 400 for 45 minutes or until heated through.
