Ingredients

- 1 lb boneless chicken breast, cut into bite size pieces
- 1/2 teaspoon olive oil
- 1/2 teaspoon garlic, minced
- 1/4 teaspoon ground cumin
- 2 (14 1/2 ounce) cans chicken broth
- 1 cup frozen corn kernels
- 1 cup onion, chopped
- 1/2 teaspoon chili powder
- 1 cup salsa
- 8 ounces corn tortilla chips
- 1/2 cup monterey jack cheese, shredded
Recipe
- 1 in large pot over medium heat, saute the chicken in the oil for 5 minutes.
- 2 add the garlic and cumin, mix well.
- 3 add the broth, corn, onion, chili powder, lemon juice and salsa.
- 4 reduce heat to low and simmer for 20-30 minutes.
- 5 to serve, break up tortilla chips in bowls, pour soup over chips. top with the cheese and sour cream if desired.
