Chicken Tortilla Soup Ala Swc

Ingredients

  • Servings: 4
  • 1 lb boneless chicken breast, cut into bite size pieces
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon ground cumin
  • 2 (14 1/2 ounce) cans chicken broth
  • 1 cup frozen corn kernels
  • 1 cup onion, chopped
  • 1/2 teaspoon chili powder
  • 1 cup salsa
  • 8 ounces corn tortilla chips
  • 1/2 cup monterey jack cheese, shredded

Recipe

  • 1 in large pot over medium heat, saute the chicken in the oil for 5 minutes.
  • 2 add the garlic and cumin, mix well.
  • 3 add the broth, corn, onion, chili powder, lemon juice and salsa.
  • 4 reduce heat to low and simmer for 20-30 minutes.
  • 5 to serve, break up tortilla chips in bowls, pour soup over chips. top with the cheese and sour cream if desired.
