Chicken Tortilla Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (14 ounce) can tomatoes
  • 1 medium onion
  • 3 tablespoons fresh cilantro
  • 2 garlic cloves
  • 1/2 teaspoon sugar
  • 2 -3 chipotle chiles in adobo
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt (to taste)
  • 8 cups chicken broth
  • 1 1/2 lbs chicken breasts, cut in bite size pices

Recipe

  • 1 put first 9 i ngredients in a blender or food processer and blend until thick.
  • 2 add chicken broth to soup pot on medium heat and add blended ingredients.
  • 3 add chicken and simmer for 20 minutes.
  • 4 to serve put tortillia chips in each bowl, add pepper jack cheese and pour in soup.
