Ingredients

- 48 ounces chicken broth
- kosher salt & freshly ground black pepper
- 1 lb ground chicken breast
- 2 tablespoons hoisin sauce
- 1 bunch watercress, tough stems removed
- 6 green onions, sliced thin
Recipe
- 1 bring broth to a boil.
- 2 meanwhile, combine chicken, hoisin sauce, and 1/4 teaspoon pepper; form into 8 2-inch meatballs.
- 3 spray a large skillet with cooking spray and heat over medium high heat.
- 4 cook meatballs, turning frequently, until well browned, about 6 to 8 minutes; reduce heat, cover, and cook through, an additional 5 to 6 minutes.
- 5 add meatballs, watercress, and green onions to the hot broth and stir to wilt watercress.
