Chinese Health Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 48 ounces chicken broth
  • kosher salt & freshly ground black pepper
  • 1 lb ground chicken breast
  • 2 tablespoons hoisin sauce
  • 1 bunch watercress, tough stems removed
  • 6 green onions, sliced thin

Recipe

  • 1 bring broth to a boil.
  • 2 meanwhile, combine chicken, hoisin sauce, and 1/4 teaspoon pepper; form into 8 2-inch meatballs.
  • 3 spray a large skillet with cooking spray and heat over medium high heat.
  • 4 cook meatballs, turning frequently, until well browned, about 6 to 8 minutes; reduce heat, cover, and cook through, an additional 5 to 6 minutes.
  • 5 add meatballs, watercress, and green onions to the hot broth and stir to wilt watercress.
