Ingredients

- 1/2 cup unsalted butter
- 1 cup onion, cubes
- 1 cup celery, cubes
- 1 cup flour
- 1 quart half-and-half
- 1 quart chicken broth
- 1 tablespoon chicken base
- 1 teaspoon pepper
- 4 cups broccoli florets, parboil and drain
- 1 1/2 cups fresh corn, roasted
- 3 cups shredded cheddar cheese
Recipe
- 1 in a 6 quart stockpot add butter, onion and celery and sauté without brown the mixture. add in the flour and combine the mixture. pour in the half and half and when the roux is thickening add in the chicken broth and stirring at all time. add in the rest of the ingredients and stirring the mixture and broccoli and taste the soup and re-season to taste.
