Cream Of Garlic Soup

Ingredients

  • Servings: 4
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons flour
  • 20 ounces canned chicken broth
  • 2 cups light cream
  • 1 dash paprika
  • 1 pinch salt
  • 1 egg yolk

Recipe

  • 1 melt butter.
  • 2 add garlic, stirring.
  • 3 cook until soft but not brown (2 minutes).
  • 4 stir in flour and cook until bubbly.
  • 5 slowly stir in broth.
  • 6 bring to a boil, stirring often.
  • 7 stir in cream and spices.
  • 8 do not boil.
  • 9 pour off a little of the soup into a bowl.
  • 10 mix the egg yolk into the soup in the bowl.
  • 11 return the soup to the pot, stirring well.
  • 12 serve hot with croutons.
