Cream Of Mushroom Soup

Ingredients
- 2 cups fresh mushrooms, chopped
- 1 small onion, chopped
- 2 cups chicken broth
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1/2 cup cream
Recipe
- 1 in a large saucepan, combine mushrooms, onion and chicken broth. cook over high heat 1 minute decrease heat to low and simmer (covered) for 15 minute
- 2 melt butter and stir in flour to make a paste. add paste to mushroom mixture and stir. turn heat up to medium and slowly add milk, stirring constantly.
- 3 when mixture thickens and begins to boil, add cream and stir. cook gently until mushrooms are tender. season with salt and peper to taste.
