Ingredients

- 3 cups mushrooms, sliced
- 3 carrots, sliced
- 3 celery ribs, sliced
- 1 onion, diced
- 1/2 cup butter
- 1 cup flour
- 3 cups wild rice, cooked
- 12 cups chicken stock
- 2 cups cream
- salt
- pepper
- nutmeg
Recipe
- 1 melt butter in a large pot
- 2 saute mushrooms, carrots, celery and onion in butter until tender.
- 3 whisk in flour.
- 4 add chicken stock.
- 5 add wild rice.
- 6 season to taste.
- 7 bring to a simmer and simmer until heated through.
- 8 add cream and heat through.
