Cream Of Tomato & Basil Soup

Total Time: 10 mins Preparation Time: 2 mins Cook Time: 8 mins

Ingredients

  • Servings: 2
  • 1 (400 g) can chopped tomatoes
  • 1 tablespoon dried basil
  • 1/2 teaspoon sugar
  • 200 ml vegatable stock
  • 50 ml single cream

Recipe

  • 1 add tomatoes, basil, sugar and stock to a saucepan and bring to the boil.
  • 2 simmer for about 5 minues.
  • 3 using a hand blender, blend the soup until smooth.
  • 4 add cream and return to heat for a furth 3 minutes.
