Cauliflower Casserole

Ingredients
- Servings: 6
- 1 head cauliflower
- 1/2 cup onion, chopped
- 1/4 cup grated sharp cheddar cheese
- 1 (10 3/4 ounce) can cream of mushroom soup (low-fat)
- 1/2 cup milk
- 6 saltine crackers
- 2 tablespoons butter, melted
Recipe
- 1 steam or boil cauliflower and 1/4 cup onions until tender.
- 2 drain and place in a 13x9-inch casserole dish.
- 3 mix grated cheese with remaining onion.
- 4 add soup mixed with milk.
- 5 pour this mixture over cauliflower.
- 6 roll crackers and mix with melted butter.
- 7 sprinkle on top of a casserole.
- 8 bake at 350°f for 25 to 30 minutes.
