Cauliflower Casserole

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 head cauliflower
  • 1/2 cup onion, chopped
  • 1/4 cup grated sharp cheddar cheese
  • 1 (10 3/4 ounce) can cream of mushroom soup (low-fat)
  • 1/2 cup milk
  • 6 saltine crackers
  • 2 tablespoons butter, melted

Recipe

  • 1 steam or boil cauliflower and 1/4 cup onions until tender.
  • 2 drain and place in a 13x9-inch casserole dish.
  • 3 mix grated cheese with remaining onion.
  • 4 add soup mixed with milk.
  • 5 pour this mixture over cauliflower.
  • 6 roll crackers and mix with melted butter.
  • 7 sprinkle on top of a casserole.
  • 8 bake at 350°f for 25 to 30 minutes.
