Cream Fresh Cauliflower Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 1 cup minced onion
  • 2 teaspoons butter
  • 2 lbs fresh cauliflower
  • 4 cups chicken broth
  • 1 teaspoon chicken bouillon granule
  • 3 cups milk
  • 2 cups shredded swiss cheese
  • 2 teaspoons curry powder
  • 2 teaspoons cornstarch
  • 1/4 cup water

Recipe

  • 1 saute onion in butter until tender.
  • 2 break cauliflower into florets.
  • 3 combine onion, cauliflower, chicken broth and bouillon.
  • 4 simmer about 10-15 minutes.
  • 5 return puree to pan and add milk, cheese and curry powder.
  • 6 combine cornstarch and water.
  • 7 stir into hot soup and heat slowly until slightly thick.
  • 8 serve with seasoned croutons.
