Carrot Ginger Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 15 carrots
  • 1 celery rib, large dice
  • 1 onion, large dice
  • 2 tablespoons fresh ginger, minced
  • 1 orange, juice of
  • 4 cups vegetable broth or 4 cups water
  • 1 tablespoon butter
  • salt and pepper

Recipe

  • 1 in a small amount of oil sweat celery and onion until translucent.
