Carrot Ginger Soup

Ingredients
- Servings: 4
- 15 carrots
- 1 celery rib, large dice
- 1 onion, large dice
- 2 tablespoons fresh ginger, minced
- 1 orange, juice of
- 4 cups vegetable broth or 4 cups water
- 1 tablespoon butter
- salt and pepper
Recipe
- 1 in a small amount of oil sweat celery and onion until translucent.
- 2 add carrots and continue to sweat.
- 3 add ginger, orange juice and broth. simmer until carrots are very tender.
