Cheese - Corn Casserole

Total Time: 1 hr 15 mins Preparation Time: 20 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 32 ounces frozen corn, thawed and drained
  • 16 ounces velveeta cheese, shredded
  • 1 (4 ounce) can chopped green chilies
  • 1/2 cup onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup milk
  • 2 cups corn chips, crushed

Recipe

  • 1 mix all ingredients reserving 1/2 cup of cheese and 1/2 cup of corn chips.
  • 2 place in a greased baking dish.
  • 3 bake at 350f for 50 minutes.
  • 4 sprinkle with remain corn chips and cheese.
  • 5 bake 5 more minutes to melt cheese.
  • 6 substutions; sometimes we use mild cheddar cheese instead of velveeta.
  • 7 sometimes we use cream of chicken soup instead of the milk.
  • 8 sometimes we use canned corn instead of frozen.
  • 9 it is all good.
  • 10 enjoy.
