Ingredients

- 1/3 cup butter
- 1/3 cup minced onion
- 1/3 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon nutmeg
- 4 1/2 cups milk
- 1 (10 ounce) package frozen spinach, thawed and drained well
Recipe
- 1 in 3qt pan, saute onion in butter until soft.
- 2 stir in flour; add salt, pepper, and nutmeg.
- 3 blend in the milk.
- 4 cook, stirring on med heat until bubbly.
- 5 keep stirring for 1 minute.
- 6 stir in the spinach.
- 7 cook 1 minute, remove from heat.
- 8 serve piping hot.
