Cream Of Spinach Soup

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/3 cup butter
  • 1/3 cup minced onion
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 4 1/2 cups milk
  • 1 (10 ounce) package frozen spinach, thawed and drained well

Recipe

  • 1 in 3qt pan, saute onion in butter until soft.
  • 2 stir in flour; add salt, pepper, and nutmeg.
  • 3 blend in the milk.
  • 4 cook, stirring on med heat until bubbly.
  • 5 keep stirring for 1 minute.
  • 6 stir in the spinach.
  • 7 cook 1 minute, remove from heat.
  • 8 serve piping hot.
