Chicken Soup

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 6 cups chicken stock or 6 cups broth
  • 3 garlic cloves
  • 3 cups cooked chicken
  • 1/2 teaspoon thyme
  • 1/4 teaspoon pepper
  • 1/4 teaspoon parsley
  • 3 carrots, sliced
  • 1/2 cup elbow macaroni
  • 1 small zucchini (med. chopped)
  • 1 tomato, med. peeled and chopped

Recipe

  • 1 heat oil, add onion and cook until soft.
  • 2 add stock stock, garlic, thyme, pepper, and parsley. bring to a boil.
  • 3 reduce heat, cover, and let simmer for 15 minutes.
  • 4 add carrots and macaroni-let simmer for 15 more minutes.
  • 5 stir in tomato, zucchini and chicken, cook until thoroughly heated.
