Cold Cucumber Soup

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 medium vidalia onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 3 cucumbers, peeled,diced
  • 2 1/2 cups vegetable broth
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 1 cup yogurt
  • 1 teaspoon dill, minced
  • salt & pepper
  • scallion, sliced finely

Recipe

  • 1 saute onion in hot oil 5 minutes over medium heat.
  • 2 add garlic and cucumber and cook 3 minutes more.
  • 3 add broth, lime juice, and sugar.
  • 4 boil.
  • 5 reduce heat and cover and cook for 20 minutes.
  • 6 cool for a few minutes.
  • 7 puree in a blender.
  • 8 add yogurt, dill, salt and pepper to taste.
  • 9 blend again.
  • 10 chill and serve in icy cold bowls.
  • 11 garnish with scallions.
