Cabbage, Tomato And Vegetable Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 5 carrots, chopped
  • 5 celery ribs, chopped
  • 4 ounces tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper
  • 15 ounces crushed tomatoes (big can)
  • 5 cups beef broth
  • 1 medium head of cabbage, chopped

Recipe

  • 1 saute the onion in the olive oil for five minutes in a big pot.
  • 2 add the garlic and saute for another three minutes. stir well.
  • 3 add the celery and carrots and saute for five more minutes. stir well.
  • 4 add the tomato paste, chili powder, basil, oregano and salt and pepper. stir well. saute for a few minutes until the mixtures gets very fragrant.
  • 5 add the crushed tomatoes, beef broth and cabbage. bring to a boil. stir well and let simmer for twenty minutes or until the veggies are cooked to your liking. enjoy!
