Barley Vegetable Soup

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 4 carrots
  • 4 stalks celery
  • 4 garlic cloves
  • 1 sweet onion
  • 1 (15 ounce) can shiitake mushrooms
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 cup pearl barley
  • 8 cups chicken broth
  • 1 cup frozen baby peas

Recipe

  • 1 heat olive oil in soup pot.
  • 2 chop all vegetables and cook in oil- over medium heat until soft- about 15 minutes.
  • 3 add salt, pepper, thyme, mushrooms and barley-cook for one minute.
  • 4 add chicken broth and bring to a boil.
  • 5 reduce to a simmer for 45 minutes.
  • 6 add frozen peas and bring to a boil again then reduce to a simmer for an additional 20 minutes.
  • 7 serve .
