Barley Vegetable Soup

Ingredients
- Servings: 4
- 4 carrots
- 4 stalks celery
- 4 garlic cloves
- 1 sweet onion
- 1 (15 ounce) can shiitake mushrooms
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 cup pearl barley
- 8 cups chicken broth
- 1 cup frozen baby peas
Recipe
- 1 heat olive oil in soup pot.
- 2 chop all vegetables and cook in oil- over medium heat until soft- about 15 minutes.
- 3 add salt, pepper, thyme, mushrooms and barley-cook for one minute.
- 4 add chicken broth and bring to a boil.
- 5 reduce to a simmer for 45 minutes.
- 6 add frozen peas and bring to a boil again then reduce to a simmer for an additional 20 minutes.
- 7 serve .
