Chicken Laksa Soup

Ingredients
- Servings: 4
- 2 cloves garlic, crushed
- 1 inch gingerroot, finely chopped
- 1 onion, chopped
- 1 carrot, chopped
- 1 tablespoon oil
- 1 1/2 cups cooked chicken (more or less)
- 3 cups chicken stock
- 1 (15 ounce) can tomatoes with juice
- 1 tablespoon sweet chili sauce
- 1/2 cup coconut milk
- 2 ounces thin noodles
- chopped fresh coriander or parsley
Recipe
- 1 saute garlic, ginger, onion and carrot in oil for a few minutes.
- 2 add chicken, stock, tomatoes and chilli sauce.
- 3 mash the tomatoes and simmer for 10 minutes.
- 4 add noodles and continue to cook until noodles are ready.
- 5 stir through coconut cream.
- 6 serve with coriander or parsley sprinkled over.
