Chili Like Mom's

Ingredients
- 3 1/2 lbs ground sirloin
- 2 green bell peppers, diced
- 1 large yellow onion, diced
- 2 tablespoons butter
- 3 (28 ounce) cans diced tomatoes
- 2 (15 1/2 ounce) cans dark red kidney beans
- 1 (6 ounce) can tomato paste
- 1 (15 ounce) can tomato sauce
- 1 (16 ounce) can tomato soup
- 6 large garlic cloves, minced
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 teaspoon cumin
- 1 tablespoon salt
- 1 tablespoon pepper
- 1/2 cup shredded sharp cheddar cheese (to garnish)
Recipe
- 1 you'll need an 8-12 qrt. pot for cooking.
- 2 in a large skillet, break up and brown ground beef, drain thoroughly.
- 3 while ground beef is browning, dice onion, bell pepper and mince garlic.
- 4 heat butter in the cooking pot, add onion, bell pepper and garlic, cook until soft and flavors have fused.
- 5 add the beef and stir in remaining ingredients to pot, cover and bring to boil for about 20 minutes, stirring occasionally.
- 6 lower heat to simmer, cover and continue simmering for about 4-6 hours stirring occasionally. the longer it simmers, the better it will be.
- 7 it should be noted too, you can mix together your favorite beans, red, dark red, pinto, black, whatever. all the ingredients can be tweaked to your liking.
- 8 when serving, you can add the shredded cheese -- i also found that a drizzle of yellow mustard and a few drops of green tabasco gives it a great chili dog flavor with out the dog. hope you enjoy!
