Chilled Avacado And Cucumber Soup

Ingredients

  • Servings: 4
  • 1/2 cup heavy cream
  • 1 1/4 cups avocados, peeled seeded, 1/4-inch dice
  • 1 cup cucumber, peeled seeded, 1/4-inch dice
  • 1 tablespoon lime juice
  • 8 ounces chicken stock
  • 1 cup plain greek yogurt
  • 1 tablespoon garlic (minced)
  • 4 ounces sour cream
  • 1 tablespoon dill (rough chop)
  • 1 tablespoon parsley (rough chop)
  • 1/2 tablespoon salt
  • 1 teaspoon pepper
  • 2 ounces whole milk
  • 1 tablespoon mint (rough chop for garnish)

Recipe

  • 1 puree heavy cream, avacado, cucumber, lime juice, chicken stock, plain yogurt, garlic, sour cream, dill and parlsey to a fine smooth consistency. whisk in milk until desired consistency. add salt and pepper. refrigerate for 45 mins, serve in chilled bowls and garnish with mint.
