Chilled Cantaloupe Soup

Ingredients

  • Servings: 4
  • 2 cantaloupes, peeled and cubed
  • 1/3 cup sugar
  • 2 ounces ironworks arctic kiwi liqueur
  • 2 tablespoons .fresh squeezed lime juice
  • 1 teaspoon coarse sea salt
  • 4 teaspoons sour cream
  • 1 fresh mint sprig

Recipe

  • 1 place cantaloupe in a food processor or blender. add sugar, liqueur, lime juice and salt. purée.
  • 2 chill for one hour.
  • 3 place in serving bowls, top with sour cream and a fresh mint leaf.
  • 4 makes 4-6 servings.
