Ingredients

- 2 (12 ounce) bottles beer (preferably lager)
- 1 tablespoon chopped chipotle chile in adobo, plus
- 1 tablespoon adobo sauce
- 1 teaspoon ground cumin
- 1 large onion, chopped
- 1 lb dried black beans, rinsed
- 1 1/2 lbs boneless lamb butt (lamb shoulder)
- kosher salt
- 1/2 cup sour cream
- 1/2 cup fresh salsa
- 1/4 cup fresh cilantro
Recipe
