Cold Yellow Tomato And Orange Soup With Thai Basil

Ingredients

  • Servings: 4
  • 1 1/4 lbs yellow tomatoes (about 4)
  • 1 cup orange juice
  • 2 tablespoons olive oil
  • salt
  • 1 pinch cayenne
  • 2 tablespoons sour cream
  • 8 leaves fresh thai basil, finely chopped

Recipe

  • 1 in a food processor, puree tomatoes, orange juice, olive oil, salt to taste and cayenne pepper.
  • 2 transfer to a bowl, cover and refrigerate until chilled, about 6 hours.
  • 3 serve garnish with sour cream and basil.
