Chicken Tortilla Soup

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 (9 ounce) package bear creek tortilla soup mix
  • 1/2 lb cooked chicken
  • 1 cup frozen corn
  • 2 (14 ounce) cans chicken broth
  • 6 soft taco-size flour tortillas

Recipe

  • 1 make the soup as directed, only using 6 cups water, instead of 8. i use the chicken broth for the other two cups.
  • 2 add the cooked chicken, in strips.
  • 3 add the corn.
  • 4 fry the tortilla strips in hot oil to brown.
  • 5 drain on a paper towel.
  • 6 i garnish this with the tortilla strips, cheese, and sour cream.
  • 7 note: i love red pepper jelly on tortilla strips.
