Ingredients

• 10 lbs mushrooms, sliced
• 2 lbs celery, sliced
• 2 lbs onions, chopped
• 1 lb butter
• 4 tablespoons garlic, minced
• 4 tablespoons hot sauce
• 3 cups wine
• 1 1/2 cups chicken base
• 1/2 cup thyme
• 4 bay leaves
• 1 gallon water
• 1 gallon cream
• 2 cups cornstarch

Recipe

• 1 saute mushrooms with butter; add celery, onion, wine; simmer 15 minutes. add chicken stock & water. add cream. bring to low boil. add cornstarch dissolved in water to thicken.
