Ingredients

- 10 lbs mushrooms, sliced
- 2 lbs celery, sliced
- 2 lbs onions, chopped
- 1 lb butter
- 4 tablespoons garlic, minced
- 4 tablespoons hot sauce
- 3 cups wine
- 1 1/2 cups chicken base
- 1/2 cup thyme
- 4 bay leaves
- 1 gallon water
- 1 gallon cream
- 2 cups cornstarch
Recipe
- 1 saute mushrooms with butter; add celery, onion, wine; simmer 15 minutes. add chicken stock & water. add cream. bring to low boil. add cornstarch dissolved in water to thicken.
