Broccoli Soup

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 bunches broccoli
  • 2 onions, thinly sliced
  • 4 cups vegetable stock
  • 1 cup plain yogurt
  • salt and pepper
  • 1 pinch nutmeg

Recipe

  • 1 remove broccoli florets.
  • 2 peel stems and cut into slices 1/4 inch thick.
  • 3 place broccoli and onion in a saucepan.
  • 4 add stock and seasoning.
  • 5 bring to boil, reduce to simmer, cover and cook until vegetables are soft (15-20 minutes) puree in food processor.
  • 6 return to pan and stir in yogurt until desired consistency.
  • 7 add salt, pepper, and nutmeg to taste.
  • 8 chill.
