Chicken A La Reine Soup

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 1 cup finely diced onion
  • 1 cup finely diced celery
  • 1 cup finely diced carrot
  • 1/3 cup all-purpose flour
  • 8 cups chicken broth
  • 1/3 cup finely diced green pepper
  • 1 cup cooked rice
  • 1 1/2 cups finely diced cooked chicken
  • 1 cup half-and-half, heated
  • salt
  • pepper

Recipe

  • 1 heat butter in large pot and cook vegetables until tender over low heat, stirring occasionally.
  • 2 add flour; cook 5 minutes, stirring constantly.
