Beer Cheese Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3/4 cup shredded carrot
  • 1/4 cup chopped onion
  • 1/4 cup margarine
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 2/3 cup beer
  • 2 cups shredded sharp cheddar cheese (8 oz.)
  • 1/8 teaspoon salt
  • 1 dash pepper

Recipe

  • 1 cook carrots and onion in margarine till tender.
  • 2 add flour and blend in smoothly.
  • 3 stir in milk and beer.
  • 4 cook, stirring constantly until liquid comes to boiling and is thickened.
  • 5 add cheese and seasonings and stir till melted.
  • 6 serve.
