Beer Cheese Soup

Ingredients
- Servings: 4
- 3/4 cup shredded carrot
- 1/4 cup chopped onion
- 1/4 cup margarine
- 1/4 cup flour
- 1 1/2 cups milk
- 2/3 cup beer
- 2 cups shredded sharp cheddar cheese (8 oz.)
- 1/8 teaspoon salt
- 1 dash pepper
Recipe
- 1 cook carrots and onion in margarine till tender.
- 2 add flour and blend in smoothly.
- 3 stir in milk and beer.
- 4 cook, stirring constantly until liquid comes to boiling and is thickened.
- 5 add cheese and seasonings and stir till melted.
- 6 serve.
