Canadian Cheddar Cheese Soup

Ingredients
- 3 tablespoons butter
- 1/4 cup carrot, finely grated
- 1/4 cup onion, chopped
- 3 tablespoons flour
- 1/2 teaspoon paprika
- 1/2 teaspoon dry mustard
- 3 chicken bouillon cubes, crushed
- 2 cups milk
- 2 cups water
- 2 cups cheddar cheese, shredded (mild, medium, or old)
Recipe
- 1 melt butter in saucepan, and sauté onion and carrots until tender.
- 2 blend in flour, paprika, dry mustard and bouillon cubes.
- 3 gradually stir in milk and water.
- 4 cook over medium heat, stirring constantly until smooth& thick, and mixture comes to a boil.
- 5 remove from heat.
- 6 gradually add cheese, continually stirring until melted.
- 7 serve immediately sprinkled with chopped parsley.
