Canadian Cheddar Cheese Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 3 tablespoons butter
  • 1/4 cup carrot, finely grated
  • 1/4 cup onion, chopped
  • 3 tablespoons flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dry mustard
  • 3 chicken bouillon cubes, crushed
  • 2 cups milk
  • 2 cups water
  • 2 cups cheddar cheese, shredded (mild, medium, or old)

Recipe

  • 1 melt butter in saucepan, and sauté onion and carrots until tender.
  • 2 blend in flour, paprika, dry mustard and bouillon cubes.
  • 3 gradually stir in milk and water.
  • 4 cook over medium heat, stirring constantly until smooth& thick, and mixture comes to a boil.
  • 5 remove from heat.
  • 6 gradually add cheese, continually stirring until melted.
  • 7 serve immediately sprinkled with chopped parsley.
