Chicken Hominy Soup

Total Time: 2 hrs 10 mins Preparation Time: 20 mins Cook Time: 1 hr 50 mins

Ingredients

  • Servings: 6
  • 2 1/2 lbs chicken, cut into 1 inch cubes
  • 2 tablespoons oil
  • 1 onion, chopped
  • 3 -5 garlic cloves, minced
  • 10 cups chicken broth
  • 1 teaspoon dried oregano
  • 2 teaspoons salt
  • 3 tablespoons ground red chili powder
  • 3 cups hominy, drained ( hominy, aka posole or pozole)

Recipe

  • 1 brown chicken in oil in a pot.
  • 2 remove chicken with a slotted spoon and keep warm.
  • 3 heat the pot to medium and add onion and garlic and sauté till the onion softens.
  • 4 add chicken, chicken broth, oregano, salt and chili powder to pot.
  • 5 reduce heat to low cover and cook for 90 minutes.
  • 6 add hominy cook 15 more minutes.
  • 7 this is the time to check the seasonings and adjust to taste.
  • 8 ladle into soup bowls garnish with onion, cilantro,lime, cheese (get creative).
  • 9 warm tortillas on the side always please the belly.
