Chicken Piccata

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 whole chickens
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons poultry seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 1 lemon, cut into quarters

Recipe

  • 1 preheat oven to 425°f.
  • 2 rinse chickens and dry.
  • 3 cut chicken in half, along the breastbone.
  • 4 cut away wing tips and backs (can be used in a soup or stock later).
  • 5 arrange chicken halves in a backing pan, skin side down.
  • 6 in small bowl, combine seasonings and sprinkle chicken with half the seasoning mixture.
  • 7 bake chicken covered for 30 minutes.
  • 8 remove and turn chicken skin side up, and sprinkle with the remaining seasonings.
  • 9 bake uncovered for 20 รข€“ 30 minutes
  • 10 serve each chicken portion with a lemon quarter.
