Classic French Onion Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1/4 cup butter
  • 2 large onions, sliced or 4 cups sliced onions
  • 2 tablespoons flour
  • 6 cups beef broth
  • 3/4 cup red wine
  • 1 tablespoon worcestershire sauce
  • 1/4 teaspoon fresh ground pepper
  • 1 bay leaf
  • salt
  • 2 cups swiss cheese, shredded
  • toasted baguette, slices

Recipe

  • 1 melt butter in a saucepan on med-low, add onions. cover and cook for 10 mins or till onions are tender but not brown (stir occasionally).
  • 2 stir in flour. then while stirring then add broth, wine, worcestershire, pepper and bay leaf while stirring. bring to a boil then cover and reduce to a simmer for 30 mins - stirring occasionally. salt to taste just before serving.
  • 3 to serve: ladle soup into bowls, top with toast and cheese. broil on high til cheese melts.
