Classic French Onion Soup

Ingredients
- 1/4 cup butter
- 2 large onions, sliced or 4 cups sliced onions
- 2 tablespoons flour
- 6 cups beef broth
- 3/4 cup red wine
- 1 tablespoon worcestershire sauce
- 1/4 teaspoon fresh ground pepper
- 1 bay leaf
- salt
- 2 cups swiss cheese, shredded
- toasted baguette, slices
Recipe
- 1 melt butter in a saucepan on med-low, add onions. cover and cook for 10 mins or till onions are tender but not brown (stir occasionally).
- 2 stir in flour. then while stirring then add broth, wine, worcestershire, pepper and bay leaf while stirring. bring to a boil then cover and reduce to a simmer for 30 mins - stirring occasionally. salt to taste just before serving.
- 3 to serve: ladle soup into bowls, top with toast and cheese. broil on high til cheese melts.
